Spaghetti Squash with Roasted Red Pepper Sauce and Beef & Turkey Meatballs

This is definitely one of my most requested recipes.  If you are looking for an alternative to pasta, spaghetti squash is it. 

Recipe:

 

Spaghetti Squash with Roasted Red Pepper Sauce and Beef & Turkey Meatballs

 

1 pound ground turkey

1 pound ground beef

1 tsp each, paprika, basil, ground mustard, granulated garlic, onion flakes, salt, pepper

1 whole green pepper

1/2 onion(chopped)

2 tbs garlic (chopped)

2 pounds spaghetti squash

2 tbs olive oil

15 oz diced tomatoes

1 tbs oregano(dried)

1/8 tsp red pepper flakes(optional)

1/2 cup basil(fresh)

salt to taste

pepper taste

1 egg

2 whole red sweet peppers

 

Equipment Needed:

cookie sheet

pastry brush

large saucepan

vegetable chopper

mixing bowl

 

Preheat oven to 400 degrees F.

Cut Squash in half.  Brush cut sides of squash with oil, and sprinkle with salt and pepper to taste. Place squash, cut sides down, on a rimmed baking sheet. Bake until tender, about 45 minutes to an hour.

Deseed red bell peppers  and brush with olive oil and place on same pan and roast for 10 to 15 minutes until blackened, take out of oven and place in a paper or freezer bag for 10 minutes, then take out of bag and pull skin off of peppers, chop peppers and set aside.

Meatballs: place deseeded green pepper, onion, 2 cloves of garlic into chopper and chop fine, put mixture in bowl, add ground beef & ground turkey, 1 egg and paprika, basil, ground mustard, granulated garlic, onion flakes, salt, pepper, combine mixture and form into meatballs, (I make mine about the size of a golf ball) place on a foil lined cookie sheet and cook at 400 for 20 minutes (do not cook longer than 20 minutes, meatballs with dry out.

In a large saucepan, heat the olive oil over medium heat. Add chopped onion and sauté until softened, about 3 minutes. Stir in 2 cloves minced garlic and cook for 2 minutes. Add the red peppers and diced tomatoes. Add oregano, red pepper flakes(if using), fresh basil, and season with salt and pepper. Simmer on stove for 10 minutes.

When the squash is done baking, let it cool for a few minutes-until you can touch it. Scrape the squash with a fork to remove flesh in long strands. Place in a large bowl or on individual plates. Top spaghetti squash with the roasted red pepper sauce and meatballs and serve warm.
