This was a new recipe I just made for  a client yesterday.  It turned out awesome!  Please try and don't be afraid of cooking salmon.  It is so easy.  Just remember DO NOT OVERCOOK.  The main reason some people don't like fish is because they do not know how to cook it and usually it is because it is overcooked.  You want it to just be pink in the middle.  I promise if you cook it right it will melt in your mouth! 



Salmon Orzo Salad


2 pounds fresh salmon(don't be afraid of this)(1 pound is fine, but 2 pounds is a good amount)

1 pound asparagus

2 cups orzo

4 cups water


black pepper

red onion(sliced very thin on a mandoline)


Lemon Vinaigrette Ingredients

1/4 cup crumbled feta

1 tbs dill(fresh)

lemon juice(fresh) from one medium lemon

lemon zest

1/2 cup olive oil


black pepper


1. Preheat broiler

2. Bring 4 cups water to boil and add asparagus, cook 3 minutes, plunge into ice bath. drain and set aside.

3. Return reserved water to boil, 2 cups add orzo and cook according to package directions.

4. While orzo cooks,, sprinkle salmon fillets with salt and pepper. place fish on foil lined broiler pan coated with oil and broil 5 minutes or until fish flakes easily break fish into chunks, combine fish with orzo, asparagus and onion,

5. Combine all vinaigrette ingredients together and combine with orzo and toss to coat.(you may need a whisk or ninja for this, check out my links to my favorites)
